At the bar, the Domaine Tselepos ‘Amalia’ Brut, a Moschofilero wine from Arcadia, quenches the thirst. This elegant sparkling wine, has refreshingly acidic fine bubbles, from which emerge aromas of rose petals, brioche and honey. The appetizers revolve around feta cheese, wild greens and crispy fyllo.

The delicacy of the scallops in tahini (sesame seed paste), Jerusalem artichoke, is tuned by the Domaine Hatzidakis, Assyrtiko, Santorini 2016. The Domaine Bosinakis - Moschofilero "Mantinia" 2016, with lemony and floral taste, fruity and citrusy, makes its mark. The organic chicken with egg and wheat encounters the Domaine Gentilini Robola of Kefalonia 2017. The complexity of this wine, with flavors of lime, apple, grapefruit, and a finish of toasted bread, originate from the plot selection. Fat in the mouth with a slight minerality, ending with a round acidity.

The 2016 Ktima Gerovassiliou Viognier enhances the ash baked potatoes, wild mushrooms, black truffle, smoked cheese from Naousa. The pasta with oxtail and shiitake are lit up by the 2015 Domaine Zafeirakis Limniona. Its hints of blackcurrant, cherry, strawberry jam, liquorice, violet but also white pepper and spices, all vibrate in unison. The roasted lamb, with tomato, butter beans, celeriac and kale combines tenderly with the Dougos Rapsani Old Vines 2015. Its aromas of tomato and red berries, coupled with notes of tobacco and ham, bring a botanical finesse to the spice's sweetness.

The conclusion of this beautiful, unpretentious journey lies in a chocolate, orange, vanilla and mint ice cream.
