Passionate about cooking since the age of 12, he decided to make it his future career, and vowed to work one day at a restaurant with three Michelin stars. In 1983, he obtained his CAP and his BEP of cooking at the hotel school of Dinard in Brittany. Aged 21, he had job interviews with two of the greatest French chefs on the same day: Paul Bocuse and Georges Blanc. Honoring his vow, he chose to work with Georges Blanc at his prestigious 3-star restaurant in Vonnas, Bresse.</p> <p>In 1989, Georges Blanc offered to represent him and to help orchestrate the kitchens of Normandy, one of the restaurants of the Oriental Hotel Bangkok (among the most beautiful palaces in the world). This is how, aged just 23, Bruno Oger got to lead a team of 15 chefs. In 1993, he rejoined Georges Blanc as executive chef.</p> <p>In 1995, he was recruited to manage the kitchens of a palace in Cannes on the Croisette. On the day of his 29th birthday, the day before the opening of the Cannes Film Festival, he inaugurated the restaurant "La Villa des Lys", a gastronomic Mecca for gourmets. In 1997, he won a first star in the Michelin Guide. Three years later, Bruno gets the score of 18/20 and is voted Best Chef of the Year by the Gault-Millau Gourmet Guide. His creations in this setting bring to mind the Provencal novels of Jean Gionot, and in particular the short tale “The Man who Planted Trees.” It tells of a widowed shepherd who sets out to reforest a barren valley to overcome his grief. The result is a brittle paradise - transcendence through nature.</p> <p>Roy harmonizes razor clams with spruce, prawns with marigold, veal with green tea, smoked fish roe with sweet corn, monkfish, salted prunes and porcini mushrooms. Disparate elements, joined in tender balance, transcend the sum of their parts. Every dish is an invitation to slowly savor the harmonic interplay of tastes. This interplay can contain a teasing shiver, brought forth by the first desert’s combination of cherry plums, elderberries and tapioca. Citrus traces and subtle bitter notes restrain colorful exuberance. With a persistent underpinning of light butters or olive oil emulsions, Le Cloître’s chef provokes a sense of unity through contrast, pairing serenity and agitation.</p> <p>"Cooking I always think of field--name-field-biography field--type-text-long field--label-hidden field__item"><p>After receiving a bachelor's degree in Cooking and a Pastry Chef's diploma, Jérôme ROY began his career at Didier FREBOUT then joined Thierry MARX's teams at the Châteaux Cordeillan Bages where he took part in the transition from 1 to 2 stars.</p> <p>In 2001, the 3-star restaurant "Maison TROISGROS" opened its doors to him. He stayed there for 6 years. Beginning as a "Chef de Partie", he was promoted to "Second," then to "Chef de Cuisine".</p> <p>Pierre GAGNAIRE invited him to join him in 2007. After a season as chef at the restaurant Les Airelles in Courchevel, Pierre GAGNAIRE offered him the position at his 2-star restaurant at the Lotte Hotel in Seoul.<br /> There, for two years, Jerome explored his passion for Asian food and culture and discovered the subtleties of Korean cuisine. In 2010, he returned to France as an Executive Chef, where, in famous Saint Tropez, he exercised his talents at the restaurant "Colette by Pierre Gagnaire".</p> <p>Taking over the kitchen of the Couvent des Minimes Hotel &amp; Spa L'Occitane in Mane, Provence, he left the seaside for the hills of Mediterranean France and obtained his first Michelin star.<br /> He was trained by some of the greatest Chefs and acquired their knowledge and know-how. Above all, these Chefs communicated to him their passion for cooking and traveling. become a sailor. At the age of 14 he embarked on his uncle's trawler for fifteen days, where a sailor introduced him to cooking. He hesitates a time between cooking and baking but an internship in bakery, decides him to opt for cooking. He joined a hotel school and in 1986 obtained a CAP / BEP of cooking at the professional high school Jean Guéhenno in Vannes.</p> <p>After a gastronomic training in Parisian houses such as Le Divellec, Lucas Carton, Taillevent, The Ritz, Christian Le Squer took control of the cuisine of the Café de la Paix Restaurant Opera. This is where he earned his first star in 1996 at the age of 34 and the second in 1998.</p> <p>In 1999, succeeding Ghislaine Arabian, he took over the Pavillon Ledoyen located at the bottom of the Avenue des Champs Elysées, in the 8th arrondissement of Paris. In 2000 he confirmed his two stars and in 2002, he was awarded the third star in the Michelin Guide. In 2008, he opened a new restaurant: Etc (for Epicure Traditional Cuisine) in Paris, for which he obtained a star in the Michelin guide the following year. In 2011, Christian Le Squer opened the restaurant La Grande Verrière at the Jardin d'acclimatation near the Bois de Boulogne. Now to find them you just have to free-dive three or four meters down… Forget about its sting: vinegar will stop the pain. Anemones have a wealth of flavors and textures. Fried in a melt-in-the-mouth fritter – a whiff of sea ! – or cooked in a creamy mousse, garnished with a bit of greens like water cress, aragula or lettuce ; some shellfish and a dash of Ossetia caviar. A milk foam. In front of you: the sea in all its simplicity.</p> <p><b>Lucie Passedat Sea Bass</b><br /> Its flesh is delicate and firm. It melts in the mouth. Here it is prepared with the flavors of the Marseille’s back-country. This was the first dish Alain Passard created, and is a tasty tribute to his grandmother, as this was her favorite fish. A slice of steamed sea bass, colorful zucchini and cucumber ribbons, a medley of light and dark greens laid on an intensely flavorful “base”. Red and green tomatoes, lemon, basil, coriander, wild fennel, olive oil and a touch of truffle – as a reminder of his family’s roots in the Quercy region – form a tender bed for this thick fish steak, cooked to bring out the creaminess of its flesh. Le Petit Nice at once. Germain married in 1924 with Luxia Alabern, opera singer, beautiful, eccentric, star, intelligent and muse of Louis Lumière. It was in 1966 that their son, Jean-Paul, an opera singer and passionate cook, transformed with his wife Albertine Le Petit Nice into a luxury hotel.<br /> They successively obtained in 1977 their first Michelin star and the second in 1981.</p> <hr /><p><b>Gérald PASSEDAT</b></p> <p>1960: Birth of Gerald Passedat.</p> <p>From 1979 to 1984 he followed a classical course, the Hotel School, Le Coq Hardi in Bougival, the Bristol then the Crillon hotel in Paris, the Troisgros brothers in Roanne, and Michel Guérard.</p> <p>In 2000, he took over the family hotel restaurant, maintains the 2 stars and <b>gets 3 star in 2008</b>.</p> <p>2010: Gerald Passedat is honored Knight of the Order of the Legion d’honneur by the President of the Republic.</p> <p>2011: Gérald becomes a founding member of the Culinary College of France alongside the biggest names in French cuisine (including Paul Bocuse, Joël Robuchon, Yannick Alléno, Alain Ducasse, Thierry Marx, Anne-Sophie Pic ...).</p> <p>2012: Gérald brings together the chefs from his region to promote Mediterranean cuisine and becomes President of the Gourméditerranée association (currently counting 40 chefs), the association will be one of the major players of Marseille Provence 2013.</p> <p>2013: Opening of the Museum of Civilizations of Europe and the Mediterranean, of which Gérald Passedat manages all the restaurant areas (1 restaurant, 1 bistro, 1 café, 1 kiosk and 1 cooking school).</p> <p>2017: Opening of the Villa La Coste, the hotel located in the Domaine Château La Coste in Puy-Saint-Reparade, which Gérald Passedat manages the entire restaurant. Moreover, the Shistes of the Massif des Maures adds a lovely minerality which is both refreshing and neat.</p> <p>The vineyard is situated between 180 and 200 meters above the sea level and is 15 km from the Mediterranean and therefore benefits from both fresher nights and hot days guaranteing the excellent quality of the wine.</p> <p>The expertise of Villa Vallombrosa starts with the grape harvest when the grapes are carefully picked once they have reached perfect maturity, parcel by parcel in order to achieve an ideal blending of the grapes for the surprising “Blanc de Blancs 2013”. This vintage is composed of Rolle (60%) and of Ugni blanc (40%). After a complex and delicate nose between pear and peach, we appreciate an ample end of mouth on apricot.
